Swiss Chard

Sautéed Swiss Chard with Garlic

1/2 - 1 bunch Swiss chard, washed and chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Heat olive oil in a large skillet over medium heat.

Add minced garlic and sauté about 1 minute.

Add chopped Swiss chard to the skillet and sauté until wilted, about 5-7 minutes.

Season with salt and pepper to taste.

Serve hot as a side dish or mix with pasta for a main.
White Bean and Swiss Chard Soup

1/2-1 bunch Swiss chard, washed and chopped

2 can white beans, drained and rinsed

1 onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 teaspoon dried thyme or other favorite spices

Salt and pepper to taste

In a large pot, sauté onion and garlic in olive oil until softened.

Add chopped Swiss chard to the pot and cook until wilted.

Stir in white beans, vegetable broth, dried thyme/spices, salt, and pepper.

Simmer the soup for about 15-20 minutes until flavors meld together.

Adjust seasoning if needed and serve hot with crusty bread.
Swiss Chard and Feta Stuffed Chicken Breast

4 boneless, skinless chicken breasts

1/2-1 bunch Swiss chard, washed and chopped

1/2-1 cup crumbled feta cheese

2 tablespoons olive oil

Salt, pepper, and paprika to taste

Preheat oven to 375°F

Slice chicken breasts lengthwise to make even slices about 1/2-3/4 in thick. Season with salt, pepper, and paprika.

In a skillet, sauté chopped Swiss chard in olive oil until wilted.

Remove from heat and mix in crumbled feta cheese.

Spoon the Swiss chard and feta mixture onto each chicken breast, then roll up and secure with toothpicks.

Place stuffed chicken breasts in a baking dish, drizzle with a little olive oil, and bake for 25-30 minutes or until chicken is cooked through.

Remove toothpicks before serving, and enjoy with your favorite sides.

Salt + Pepper
Separate Chard leaves from ribs. Dice chard ribs. Fold and chop chard leaves into small pieces. Dice Green Onions. Peel and thinly slice Cucumber. Mix all ingredients in your favorite bowl. Salt + Pepper + Fav Spices to taste. Enjoy now or refrigerate for later.
